Occasionally, at Home Farm Herbery, we fall in love with a very special, rare and expensive tea and we only drink it when we need to make ourselves feel special simply because we try to keep ourselves on a budget. This very special, rare and expensive tea is called Jasmine Bai Mu Dan Tea.

Jasmine Bai Mu Dan is a splendid tea to enjoy throughout the day and is wonderful when paired with food.

Bai Mu Dan translates to “white peony” and this type of tea is preferred by some white tea drinkers for its more complete flavor and greater potency than the other major type of white tea, Bai Hao Yinzhen (better known as Silver Needle). If you haven’t tried a white tea before this is an excellent introductory tea.

The family of tea cultivars used in producing Bai Mu Dan is the “Dai Bai” varieties. Our Bai Mu Dan hails from Fujian Province, China, and is the second plucking of the white tea season of early spring (with Silver Needles being the first). This high quality, and fairly rare, early season tea is only plucked during a 2-3 week period each year. Grown in the area surrounding the town of Fuding, Bai Mu Dan is popular with Chinese tea drinkers, especially in the hotter regions of the country.

Once picked the freshly plucked tea leaves are dried in the sun and then piled briefly for oxidation. Depending on the weather, conditions of the pluck and the desired flavor requirements of the tea master, the sunning typically takes between 1-3 days and the piling between ½-3 hours. Bai Mu Dan is a mix of light and long, dark green leaves with white flecks and silvery tips. The dark leaves indicate that a light oxidation has taken place.

Our Jasmine Bai Mu Dan is hand rolled and the leaves are expertly tied together by hand and then the leaves are delicately flattened to form a ‘wheel’ shape. The tea is lightly steamed and dried with fresh Jasmine flowers, which transmits a delicate aroma and flavor. When you place a Jasmine Bai Mu Dan wheel in your cup and add the heated water the leaves begin to uncurl and transform. Once the infusion time is complete the tea leaves look a bit like a spiked ball.

You will discover our Jasmine Bai Mu Dan has a delicate fragrance that is floral and warm with a hint of fruit blossoms. The flavor is clean, luscious and somewhat fruity sweet in flavor with undertones of currants and melons. It does not possess any astringency or grassy flavors.

The tea liquor is a very pale green or golden color and it is low in caffeine and low in antioxidants. 1 oz makes 12 cups of tea and we suggest you just steep at 158°-176° for 3-5 minutes.
