Home Farm Herbery Lobster mushrooms are a flavorful addition to any well stocked pantry, as the drying process intensifies their rich flavor while also extending their shelf life. It takes about 5 pounds of fresh lobster mushrooms to create 8 ounces of dried lobster mushrooms.
Lobster mushrooms are extremely versatile mushrooms and can be substituted in just about any recipe calling for any other mushroom. They retain their texture after cooking and can be added to scrambled eggs, omelets, baked pasta dishes, soups, stews, stuffing, terrines and simple cream sauces. We also like to add them to vegetable sautés. Lobster Mushrooms pair well with beef, chicken, shellfish and veal.
The texture of the Lobster mushroom’s flesh is brittle and granular. The seafood like taste may be somewhat complex with multiple layers of flavor depending on the host mushroom. According to some, they may have a slightly peppery flavor if the host mushroom is a Lactifluus.
With a firm, dense texture they often possess a spicy, strong shrimp and shellfish aroma and Lobster Mushrooms also have the ability to add a bit of color to just about anything they are cooked with.
You can add dried lobster mushrooms to soups, stews and sauces and they’ll reconstitute during the cooking process. To reconstitute either soak them for 30 minutes in lukewarm water or wine or you can blanch them in boiling water for 2 – 5 minutes.
Once rehydrated keep the extra mushroom broth to add flavor to other dishes. Use this mushroom broth sparingly as it tends to be quite potent and can easily overpower a dish.
