Did you know? Cauliflower needs a special treatment to get it white! It’s called BLANCHING! You can start the Blanching process when the cauliflower grows to about the size of a large egg. All you need to do is to wrap 3 or 4 of its leaves together over the cauliflower head. Just use is a rubber band to wrap its leaves. The goal with blanching is to keep out any light and moisture. You just need to make sure it can get air! AND … leave enough room for it to grow inside its shell!
